This is one of the easiest dishes to make and the results are mouth-watering.
I found the recipe on the Food Network here in the USA – I must admit I haven’t really changed it!
Beef short ribs come either bone in or bone out – I prefer the bone out as it makes for easier prep and plating, especially if you have a glass of wine whilst you are waiting for them to cook….
Ingredients – serves 4:

2 tbsp butter, or use olive oil if you want to be a little more healthy

4 beef short ribs (about 225g/8 oz each)

salt and black pepper

4 garlic cloves, peeled and smashed (or 2 teaspoons minced garlic from a jar)

1 bottle red wine (I have tried Merlot, Zinfandel and Shiraz and they all work well)

4 cups low sodium vegetable stock/broth

2 tbsp plain (all purpose) flour, or brown gravy mix
Method:

Heat your oven to 160C/140C fan forced/325F.

Heat the butter or oil in a large Dutch oven, (or any cast iron casserole pot), on your stovetop over medium high heat.

Season the ribs, then add them to the pot and brown on all sides.

Transfer the ribs to a plate, then add garlic to the pot and stir until softened but not brown (about 1 minute).

Carefully pour the wine onto the garlic, bring to the boil and cook until reduced to about 1 cup.

Put the ribs back into the pot, (together with any juices they have released), and then add the vegetable stock. Bring to the boil then reduce to a simmer.

Cover the pot and then transfer to the oven to cook for about 3 hours, until the meat is totally tender and just about falls off the bone.

Transfer the ribs to a plate and keep warm, then strain the braising liquid through a fine mesh sieve into a saucepan set over medium high heat.

Simmer the liquid, skimming the fat if necessary, then add flour and stir until the gravy thickens. Season if necessary.

Transfer the ribs and gravy to a serving dish and serve with potatoes (mash is best) and vegetables of your choice.
