Chicken Caesar Meatball Sub

Trust me when I say that my photos really don’t do this recipe justice. I couldn’t help it – the sub looked so good I was rushing to eat it!

These subs would make a great family lunch as they are very easy to make. The caesar dressing is much simpler than you think but very tasty. If you want you could change the meatballs into burgers instead, then cook them on the BBQ.

Ingredients – serves 4:

  • 4 baby turkish breads, or your favourite bread rolls
  • Cos lettuce leaves, washed and trimmed


  • 500g/1lb chicken mince (ground)
  • 150g/5oz diced bacon pieces
  • 1 garlic clove, crushed
  • 1/4 cup dried breadcrumbs

Caesar Dressing:

  • 1/3 cup whole-egg mayonnaise
  • 1 garlic clove, crushed
  • 2 teaspoons white wine vinegar
  • scant 1/4 cup parmesan, finely grated


  • To make the meatballs, mix all the ingredients together in a medium bowl then use your hands to form into 12 meatballs.
  • Place the meatballs on a plate, cover in cling wrap and then refrigerate for at least 30 minutes (but they can be left overnight if you like).
  • When ready to serve, mix the dressing ingredients in a small bowl.
  • Spray a non-stick frying pan with cooking spray, then cook the meatballs over a medium/high heat for 10-15 minutes turning regularly, until the meatballs are golden brown all over.
  • Split your bread rolls in half and spread each side with a little of the dressing.
  • Place your lettuce in the rolls, then top each roll with 3 meatballs.
  • Top the meatballs with a little more dressing.
  • Serve and enjoy!
