Wholemeal Breakfast Muffins with Dried Fruits

Eat too much over the holidays? These must count as healthy eating – cereal, wholemeal flour and dried fruit all in one tasty muffin – ideal for breakfast on the go.

If you have any odd boxes of left-over cereal that may have been sitting in your pantry for a while because the family moved on to a different favourite before the box was empty, this is a great way to use them up. I had some muesli-style cereal that didn’t get finished by our recent family visitors, so I threw that in to the bowl along with some of my husband’s Weetbix which I crumbled up.

You can also use any dried fruit that you like. My choice was dried cranberries and some mixed dried fruit that I had left over from my Christmas baking exploits. Dried apricots or perhaps even banana chips would work well too.

These are a great idea for a make-ahead breakfast if you know that you are going to have a busy day, or you could pack them into the kids’ lunchboxes for a morning snack.

Ingredients – makes 12:

  • 140g/5 oz wholemeal flour (or use plain flour if you don’t have wholemeal)
  • 1 tbsp baking powder
  • 200g/7 oz muesli or cereal of your choice
  • 100g/3.5 oz dried fruit of your choice, chopped if necessary
  • 100g/3.5 oz brown sugar
  • 2 eggs
  • 250ml/9 oz milk
  • 1 tbsp lemon juice
  • 6 tbsp vegetable oil

Method:

  • Heat your oven to 200C/180C fan forced/390F.
  • Spray a 12 hole muffin pan with some cooking spray.
  • Mix the flour, baking powder, cereal, dried fruit and sugar in a large bowl.

  • Whisk together the eggs, milk, lemon juice and oil in a jug.
  • Pour the liquid into the bowl with the dry ingredients and then mix to combine. (The mixture will be quite wet.)
  • Spoon the mixture between the 12 holes of the pan.
  • Bake for approximately 20 minutes, or until golden and firm to the touch.
  • Turn out onto a wire rack and leave to cool completely. If you want to store overnight then put into an airtight container.
  • Enjoy!
