Tomato and Lentil Soup with Cheat’s Garlic Bread

Looking for a quick but tasty lunch or dinner? Try this.

This soup is simple to make plus it is very tasty and has a great chunky texture. Of course if you prefer a smooth soup you could finish it off with a blitz in the blender (or use a stick mixer). Also, I added some light sour cream but you could leave this out if you are watching your diet.

I’ve teamed the soup up with my speedy version of garlic bread. The best thing about this is how cheap it is compared to garlic bread that you buy ready made from the shops. I also like the addition of herbs, and the fact that it is ready in just one minute. Plus, the other bonus with this is that the bread doesn’t even need to be very fresh as heating it with the butter makes it go lovely and soft.

Ingredients – serves 4:


  • 1 tbsp oil
  • 1 onion, diced
  • 1/2 teaspoon dried mixed herbs
  • 1/4 teaspoon dried garlic granules
  • 3 tbsp tomato paste
  • 400g/14 oz can diced tomatoes
  • 150g/5 oz red lentils, rinsed
  • 1 litre/4 cups vegetable stock (I used 2 vegetable stock cubes dissolved in boiling water)
  • black pepper, to season
  • 2 dessertspoons light sour cream, optional
  • basil leaves, to garnish, optional

Garlic bread:

  • 8 slices baguette-style bread
  • butter or margarine, to spread
  • sprinkle of dried mixed herbs
  • sprinkle of garlic granules, to taste (bigger sprinkle if you like it really garlicky)


  • To make the soup, heat the oil in a large saucepan then add the onion and cook for a few minutes until it softens.
  • Stir in the herbs, garlic granules and tomato paste and cook for a minute.
  • Add the canned tomatoes and lentils and stir, then pour in the stock.
  • Bring to the boil, then cover and simmer over a low heat for 20-25 minutes. The lentils should be soft.
  • Turn off the heat and stir in some black pepper and the sour cream, if using.
  • To make the garlic bread, spread both sides of your baguette slices with butter (or margarine). Place on a microwave-safe plate and sprinkle over the herbs and garlic granules (on only one side of the bread).
  • Microwave the bread for 1 minute, or until the butter melts.
  • Serve the soup, topped with a couple of basil leaves (if using), with the garlic bread on the side.
  • Enjoy!
