Potato, Cheese and Onion Bread

Who would have thought that a bread made with grated potato would taste so good?

This loaf is lovely and cheesy with just a hint of onion. Funnily enough, when you eat it you really wouldn’t know that there was any potato in the bread as it all just melts into the dough.

Of course, you can use any cheese that you like for this recipe. I think it could also take the addition of some crispy bacon or even chorizo, but it doesn’t necessarily need either.

I cooked this as one big round loaf, a bit like my damper, but you could make two smaller loaves (eat one and freeze the other), or even muffins which would be ideal for lunchboxes. It would also be an excellent accompaniment to soup or stew.

Ingredients – serves at least 6:

  • 2 and 3/4 cups self-raising flour
  • 1 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 medium potatoes, coarsely grated (only peel if your potatoes are dirty)
  • 3 spring (green) onions, finely sliced
  • 1 teaspoon dried oregano
  • 1 cup grated cheese (I used ‘tasty’), plus extra to top
  • 110g/4 oz feta cheese, finely diced
  • 3/4 cup milk
  • 2 eggs
  • 2 heaped teaspoons wholegrain mustard

Method:

  • Heat your oven to 200C/180C fan forced/390F.
  • Line a baking tray with baking paper and then spray with a little cooking spray.
  • Put the flour, salt and pepper in a bowl then add the grated potato, onions, oregano and cheeses. Stir to coat everything in the flour.
  • Whisk together the milk, eggs and mustard in a jug and then pour into the bowl with the other ingredients.
  • Stir to combine everything – it will not be a dough but instead will be quite a wet mixture.
  • Spoon the mixture into the middle of the baking tray and spread to form a disc that is just under 5cm/2 inches thick.
  • Top with the extra grated cheese.
  • Bake for 40-45 minutes or until golden all over.
  • Leave to cool for 10 minutes then cut into wedges and serve.
  • Enjoy!

  5. I have such little patience for breads that need yeast and time to rise . However this is a great easy bread that seems so simple and will satisfy any carb craving one may have. A one pan wonder. I am all about that!
