Do you get bored with plain salted nuts at this time of year?
When you next have guests, try this recipe for something slightly different. These nuts take just minutes to prepare and are a great alternative to store bought packets that can be much more expensive.
You can flavour the nuts a couple of days in advance if you like – just wait until they are cool and then store in an airtight container.
I adapted a recipe that I found in the December 2005 issue of Table magazine (which is no longer published).
Ingredients – snack for 4 people:
- 1 tbsp olive oil
- 3 teaspoons curry powder
- 2 teaspoons Worcestershire sauce
- 1/4 teaspoon chilli powder (or a little less if you like)
- 250g/9 oz mixed salted nuts
- sprinkling of dried red chilli flakes, to taste
Heat your oven to 150C/130C fan forced/300F.
Heat the oil in a frying pan over a medium heat, then add the curry powder, Worcestershire sauce and chilli powder. Stir for a few seconds until fragrant.
Add the nuts and toss to coat in the spices.
Put the nuts onto a baking tray that has been lined with baking paper.
Bake for 8-10 minutes or until just golden.
Remove from the oven and sprinkle over the dried red chilli flakes to suit your taste.
Cool on the tray then place into an airtight container until ready to serve.
