Blue Cheese and Port Pâté

Here is another recipe for all the cheese lovers out there.

Last year I made a chicken liver pâté but this year I thought I would make another pâté which doesn’t include any meat. It has plenty of cheese and alcohol instead 🙂

This takes only a few minutes to prepare. It does need a little time in the fridge to set, but you can make it the day before it is required. Just bring it to room temperature to serve with crackers, crusty bread or even celery & carrot sticks.

The recipe came from  ‘The Ultimate Christmas Cookbook’.

Ingredients – serves 10:

  • 300g/10.5 oz blue cheese, at room temperature
  • 350g/12 oz cream cheese, softened
  • 50g/2 oz butter, softened
  • 1/3 cup port
  • 1 tbsp fresh chives, snipped
  • walnut pieces, optional, to decorate

Method:

  • Put the blue cheese into a small bowl and mash it with a fork.
  • Put the cream cheese and butter into a large bowl and use electric beaters to beat together until smooth.
  • Stir in the port, then stir in the blue cheese and the chives.
  • Spoon the mixture into a serving bowl and smooth the surface.
  • Cover with cling wrap and refrigerate until firm.
  • Before serving, bring to room temperature then remove the cling wrap and decorate with the walnuts (if using).
  • Serve and enjoy!
