Triple Cheese, Herb and Garlic Share Bread

This bread is full of cheese and perfect for a party.

There is parmesan in the dough, soft cheese sandwiched in the middle and grated cheddar on the top. That makes every slice deliciously cheesy, with a hint of herbs and garlic thrown in for good measure.

I saw a pizza on Pinterest which had similar presentation to this with the sauce in the middle, and I thought it was a great idea. With the holidays approaching this would be perfect to feed a hungry crowd as an appetiser or as a snack to accompany drinks.

You can use whatever sauce or dip you like to go with this – I simply mixed equal amounts of sweet chilli sauce and light sour cream. That gives a lovely textured dip which has a good kick, although that kick is mellowed by the cool sour cream.

An adaptation for this bread would be to put deli meats or cooked bacon in the middle of the dough sandwich…. 🙂

Ingredients – serves 6-8:

  • 1 teaspoon sugar
  • 1 and 2/3 cups lukewarm water
  • 7g/0.25 oz sachet dried yeast
  • 4 cups plain (all purpose) flour
  • 1/2 cup finely grated parmesan
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 2 garlic cloves, crushed
  • freshly ground black pepper, to season
  • 3 tbsp olive oil (it doesn’t need to be extra virgin)
  • 100g/3.5 oz soft cheese (I used one which contained spring onion & herbs for extra flavour)
  • 2 cups grated cheese (I used cheddar but mozzarella would be good too)
  • extra virgin olive oil, to drizzle
  • dip or sauce of your choice, to serve

Method:

  • In a small bowl, dissolve the sugar in the water and then scatter the dried yeast over the top. Set aside in a warm place for at least 10 minutes, or until the yeast is frothy.
  • Put the flour, parmesan, salt, oregano, thyme and garlic in a large bowl. Season well with black pepper, then stir in the yeast mixture and the oil.
  • Bring the dough together using your hands, then knead for a few minutes until smooth. (You can use the dough hook on your electric mixer to do this, if you have one).
  • Put the dough into a lightly oiled bowl, cover with cling wrap and set aside for 45 minutes or until doubled in size.
  • Knock back the dough by punching it with your fist.
  • Heat your oven to 200C/180C fan forced/390F and lightly grease a 30cm/12 inch pizza pan.
  • Divide the dough into two pieces. Form the first piece into a disc, place on your pan then spread to the edges. Make a hole in the centre which is slightly larger than your sauce/dip bowl.
  • Scatter over pieces of your soft cheese, then sprinkle over half the grated cheese.
  • Form the remaining dough piece into a disc and sandwich it on top of the first piece. Spread the dough out if necessary, then roll over the edges to seal. Make a hole in the centre which matches that in the first piece of dough.
  • Drizzle with a little extra virgin olive oil then sprinkle over the remaining grated cheese.

  • Bake for about 30 minutes or until golden brown.
  • Cut into wedges, add your bowl of sauce/dip to the middle then serve and enjoy!
