Cranberry Coconut Ice Slice

Pretty and delicious.

This slice would make a great gift for friends and neighbours as it is simple and cheap to make. It also makes a pleasant change to chocolate, which is in overload at this time of year.

The light cookie crumb base makes this seem very different from traditional coconut ice. I used vanilla cream-filled cookies to make the base of my version but you could use any variety that you like, even gluten free.

Before you cut this into pieces, bring it to room temperature so the cookie base doesn’t break. Once cut, store in an airtight container in the fridge.

Ingredients – makes about 20 pieces:

  • 250g/8 oz plain or vanilla cookies
  • 85g/3 oz unsalted butter, melted
  • 2 cups icing (powdered) sugar, sieved
  • 4 cups finely dessicated coconut
  • 395g/14 oz can sweetened condensed milk
  • few drops pink food colouring
  • 1/2 cup dried cranberries, roughly chopped

Method:

  • Lightly grease a 13cm x 36cm (5 x 14 inch) loose-bottomed tart pan.
  • Blitz the cookies in your food processor until they form crumbs, then mix with the melted butter. Tip into the prepared pan and spread, pressing to form the cookie layer. Refrigerate for 30 minutes.
  • Put the icing sugar, coconut and condensed milk into a large bowl and stir to combine.
  • Transfer about 1/3 of the mixture to a second bowl and add the food colouring to that portion. Mix to combine.
  • Tip the pink coloured mixture into the prepared pan and use the back of a spoon to spread over the cookie base. Press down gently as you spread.
  • Fold the chopped cranberries into the remaining uncoloured coconut mixture. Tip this into the pan and spread over the pink layer. Level the surface with the back of your spoon.
  • Cover the pan in cling wrap and place in the fridge for 2-3 hours until firm.
  • Remove from the fridge and let the slice come to room temperature before slicing and serving.
  • Enjoy!
