Super Savoury Sausage Rolls

These are the easiest sausage rolls but with something extra.

A lot of you might not have heard of one of the ingredients in these – Vegemite. It is a savoury spread that is pretty much one of the national food products of Australia. Those in the UK have their own version – Marmite – but personally I only like Vegemite. If you have never heard of it, or already know that you don’t like it, then by all means substitute something else instead – a thick BBQ or steak sauce would do the job.

I used small beef chipolata sausages as beef is the most common sausage here. These would work equally well with pork or even turkey sausages. One tip, from personal experience, is to brown the sausages and then let them cool before trying to roll them in the pastry. I didn’t and my pastry suffered from some melting 🙂 Oh well, they still tasted good!

Ingredients – serves 4-6 as a snack/lunch:

  • 16 small ‘chipolata’ sausages
  • 2 sheets frozen puff pastry, thawed (my sheets are 25cm/10 inches square)
  • 2 tbsp Vegemite (or BBQ sauce if you prefer)
  • a little milk, to glaze
  • finely grated parmesan cheese, optional

Method:

  • Put the sausages into a non-stick griddle or frying pan and place over a medium heat on the stovetop. Cook, turning regularly, until lightly golden brown on all sides. (The sausages will continue cooking in the oven later). Remove the sausages to a plate and leave until cool enough to pick up with your fingers.
  • Heat your oven to 200C/180C fan forced/390F and lightly coat a baking tray with cooking spray.
  • Place your thawed pastry onto your work surface and spread with the Vegemite (or BBQ sauce) right to the edges.
  • Carefully cut the pastry into 3 even pieces (but don’t damage your work surface). Note: if you have bigger sausages or different sized pastry then you may need to adjust this slightly.
  • Place 1 sausage at the end of one of the pastry pieces. Roll the pastry just enough to enclose the sausage, then use your knife to cut the pastry at that point. Place your sausage roll onto the baking tray.
  • Repeat the above step until all your sausages have a pastry jacket.
  • Glaze the sausage rolls with a little milk, then scatter over the parmesan cheese, if using.
  • Bake for 25 minutes or until golden brown.
  • Remove from the oven and leave to sit for 10 minutes before serving.
  • Enjoy!
